Zucchini bread, like fruitcake, has become something of a culinary joke. It seems folks assume you make zucchini bread only when your garden has produced too much of the vegetable. While this is a fine reason to make zucchini bread, I believe there is an even better reason. Make zucchini bread because it tastes great! This recipe is fantastic. If you happen to have too much zucchini on hand, double, or even triple, this recipe. Bake and cool the loaves, then freeze them.
