When you're on the run and hungry, what do you grab to eat? Fruit? Nuts? Perhaps a power bar? While there are many gluten-free and allergen-friendly power bars on the market, none are really budget friendly. And if you're like me, allergic to tree nuts, soy, and sesame in addition to being gluten-free, most commercially prepared power bars don't work for your diet anyway.
Thankfully Camilla Saulsbury came to the rescue! Her new book Power Hungry: The Ultimate Energy Bar Cookbook teaches us how to make healthy power bars from scratch.
Honestly before this book landed on my desk, it never occurred to me that you could make power bars from scratch! For some silly reason, I thought power bars sprang from a factory, not a home kitchen.
But after reading Power Hungry, I practically ran into the kitchen to whip up a batch. And with so many different recipes to choose from--the book includes recipes not only for power bars but for healthy cookies and brownies, too-- it was hard to pick just one.
I settled on a batch of “Healthy Hippy Bars”, a bar that combines gluten-free oats, hemp hearts, dried cherries, chocolate, coconut, flaxseed meal, almond butter, and honey. They were super easy to make, worked as the recipe promised, and produced really tasty bars. How tasty? Moan and groan while you ate them tasty!
And the best part? I could adapt the recipe to suit my dietary needs. In the introduction, Camilla talks about how to make the bars safe for those on a gluten-free diet (use gluten-free ingredients, mostly), a dairy-free diet, a paelo diet, and a vegan diet. So not only does this book help you crank out budget-friendly recipes, it helps you adapt each recipes to suit whichever special diet you need to follow.
I'm so glad Camilla wrote this book. Now I can make healthy power bars and tasty protein brownies and cookies without worrying about questionable ingredients, cross-contact, or my wallet!
