It's confession time. This is not really how I make this recipe at home. Shepherd's pie, for me, is a great excuse to use leftover mashed potatoes. I rarely--okay never--boil potatoes just to make this dish. If you have leftover mashed potatoes, you make this in under 30 minutes. If you don't have mashed potatoes on hand, it will take you longer from start to finish, but boiling potatoes is not really active cooking, is it? Want to find me on Saturday mornings? Chances are I will be at the Troy Waterfront Farmers' Market. The bounty offered at this market is incredible. Each year I wait for the locally grown fresh onions. The Denison Family Farm provided my family with wonderful onions all last summer. Fresh onions do not have the papery brown skin. Rather, they are firm and bright white with their green stalks still in place. I find fresh onions to be much milder than the onions found in the supermarket. Don't panic when you see this recipe calls for 2 large fresh onions. When sautéed, they are sweet and melting. Not overly "onion-y."
