Gluten-Free Cod Cake Recipe
When I crave something a "little different" for dinner, I pull out this recipe. The lemon, scallions, and fresh herbs lend a nice flavor to the cod cakes. From start to finish this dish takes about 45 minutes to make. However, you might work faster at the end of the day than I do. . . . keep reading

Gluten-Free Breaded Pork Cutlet Recipe
Tired of chicken? This recipe for crispy pork chops is a nice alternative. Be sure to pound the meat until it is very thin. This will ensure the pork is crunchy. . . . keep reading

Spinach Salad with Apples and Olives Recipe
This salad is a nice break from iceberg, tomatoes and carrots. The sweetness from the honey and apples is balanced by the Kalamata olives. This recipe includes a homemade vinaigrette. You can use any vinegar, mustard or olive oil you like. What I use is included in parenthesis next to the ingredient. . . . keep reading

Quick and Easy Shepherd's Pie Recipe
It's confession time. This is not really how I make this recipe at home. Shepherd's pie, for me, is a great excuse to use leftover mashed potatoes. I rarely--okay never--boil potatoes just to make this dish. If you have leftover mashed potatoes, you make this in under 30 minutes. If you don't have mashed potatoes on hand, it will take you longer from start to finish, but boiling potatoes is not really active cooking, is it? Peel the potatoes, plop them in cold salted water, turn on the burner and relax while they boil. Shepherd's pie is classic comfort food. Enjoy it. . . . keep reading

Gluten-Free Fried Chicken Recipe
Just talking about fried chicken can spark a major debate. Fried chicken is one of those foods that people are incredibly passionate and opinionated about. This recipe is my version of the classic. It contains baking powder to ensure a light, very crunchy outer skin. The overnight soak in buttermilk and Tabasco sauce helps to tenderize the chicken and give it a little "zing." . . . keep reading

Farmers' Market Pasta Recipe
Want to find me on Saturday mornings? Chances are I will be at the Troy Waterfront Farmers' Market. The bounty offered at this market is incredible. Each year I wait for the locally grown fresh onions. The Denison Family Farm provided my family with wonderful onions all last summer. Fresh onions do not have the papery brown skin. Rather, they are firm and bright white with their green stalks still in place. I find fresh onions to be much milder than the onions found in the supermarket. Don't panic when you see this recipe calls for 2 large fresh onions. When sautéed, they are sweet and melting. Not overly "onion-y." Get to your local farmers' market and support local agriculture--your community and your taste buds will thank you. . . . keep reading

This side dish recipe is easy enough to make on a busy weeknight. You can add any vegetables, cooked meats or cheeses that you love. By the way, kids love this dish as much as adults do. It's a real family pleaser. . . . keep reading

Sautéed Chicken Recipe
Boneless, skinless chicken breast can be so boring! This breaded chicken breast is easy to make and tastes great. Gluten-free breadcrumbs lend a wonderful crunch and the light egg mixture helps to keep it moist. . . . keep reading

Classic Egg Salad Recipe
There is nothing worse than bad egg salad. Just one mouthful of overly mayonnaised, mushy egg salad can turn a person off egg salad for life. This recipe, containing many great flavors, is a far cry from boring egg salad. . . . keep reading

Maple-Mustard Glazed Ham Recipe
For large gatherings, I like an easy-to-make main dish. This ham fits the bill. The glaze lends a sweet-tangy crust to the ham and can be doubled if your family loves a thick glaze. . . . keep reading

Easy Veggie Chili Recipe
This is one of those recipes that looks harder than it is. Sure, the list of ingredients is long. However, it you take a good look at the list, you will notice most of the ingredients come straight from a can. All you need to do is chop some veggies and throw everything in a pot. Try this recipe on a cold March night. It is sooooo good; no one will miss the meat. . . . keep reading
