Chocolate Chip Cookie Cake In the 8th grade, I was lucky to be in Mrs. Staph's homeroom. Not only was she an excellent teacher, she was an outstanding baker. To celebrate students' birthdays, Mrs. Staph always made a chocolate chip cookie. Everyone loved these cakes.
One weekend, I decided to try my hand at making a chocolate chip cookie cake. I knew my family would love it! (Mrs. Staph kindly gave me the recipe.) The recipe looked easy enough. It was chocolate chip cookie dough patted into a 9 x 13 inch baking pan. What could go wrong?
Well, something did! The cake turned out flat and tough. I guess it was my first lesson in baking science. This failure didn't stop me. I asked my mom to help and with her guidance, the recipe worked.
I still love chocolate chip cookie cakes! Now, I would probably call the recipe "chocolate chip cookie bars." But, Mrs. Staph called it a "chocolate chip cookie cake". And so do I! . . . keep reading
Strawberry Cake Several readers have requested a "box-like" strawberry cake. Here it is! Perfect for kids, this cake is pink--courtesy of the Jell-O® and strawberry extract. Does this cake contain any fresh berries? Nope! It's simply not that type of cake. It's the kind of cake that makes great cupcakes or a picture perfect birthday cake. Both require mounds of icing, of course! . . . keep reading
Winter Apple Cake When I was about 8 or 9 my mother's good friend made an apple cake. I loved it. When I asked for a second slice, Mary sent us home with the entire cake. Can you even imagine my joy?? I still love this recipe. It's a sweet cake, but the generous amount of apples and spices temper the sweetness nicely. I eat this cake alone, but my husband likes it with ice cream. Either way, it's delightful. . . . keep reading
Gluten-Free Pumpkin Chocolate Chip Cake Recipe Gluten-Free baking is amazing, isn't it? The same basic ingredients eggs, sugar, butter, yeast, and gluten-free flours can produce an endless array of delicious foods. I think this is the reason I love baking so much. With cooking, when you start cooking a steak, you end up eating a steak. Not so with baking! The same ingredients, in different proportions, yield very different results.
While debating whether to include this recipe in the newsletter, I kept thinking, "We did pumpkin bread last year, should we do another?" My internal response was "Yes! Yes! Yes! This pumpkin bread is so different from Rosie's pumpkin bread. You must include the recipe."
Well, now that you know I talk to myself...Let's talk about this cake! It's a winner. Baked in a Bundt pan, the cake is moist and studded with chocolate chips. Serve it for breakfast or dessert, anytime you are in the mood for a little taste of fall. . . . keep reading

Gluten-Free Cornmeal Cake with Very Berry Compote Recipe Don't think of cornbread when you look at this recipe. It couldn't be more different. This is a rich cake. The cornmeal provides a nice crunch, but it isn't the only, or overwhelming, characteristic.
I usually serve this cake after a light dinner, that way no one feels guilty about helping themselves to a second piece. . . . keep reading
Chocolate Buttercream Icing (Frosting)Recipe I think I have this recipe committed to memory. It is rich, but not overwhelming. Be sure to sift the cocoa powder with the confectionery's sugar. I found out the hard way that if you forget that step you will end up with a lumpy icing! . . . keep reading
Gluten-Free Yellow Sheet Cake Recipe There is something regal, yet homey, about an iced sheet cake sitting on a table. Kids are drawn to it, of course, but so are adults. The phrase "Oh, alright, I'll have a piece but make sure it's small." is always uttered when cake is around. No matter what else is on the menu, everyone seems to save room for cake. . . . keep reading
Gluten-Free Boston Cream Pie Recipe Toward the end of January, after the holidays become a memory, things can get a little blah. This recipe is the perfect antidote for a blah winter day. Made in three steps, this cake will give you something fun to do. And when it is done, it's so pretty you will forget that it gets dark at around 5:00 pm. . . . keep reading
Gluten-Free Chocolate Snack Cakes Recipe One of things that bothers me is the clichéd idea that you must not enjoy "fun foods." It seems to be a commonly held belief that once you discover so-called gourmet foods, like arugula and crème brûlée, you must never again eat a snack cake or macaroni and cheese. Well, I don't buy into that nonsense. I am an advocate of eating what you love. I enjoy snack cakes. In fact, I eat them with gusto. There is nothing like plunging your teeth through a dark chocolaty cake into a seductively soft whipped filling. Once you try this recipe, you will understand what I am taking about! . . . keep reading
