Blueberry Cheesecake Bars
Thanks so much for all your recipes. I wanted to share a recipe with your readers for a cheesecake I've been making for years. When I was diagnosed, it was easy to convert this recipe to gluten-free. I just needed to use gluten-free cookies instead of my traditional graham crackers. Honestly, I don't think anyone even noticed! Anytime I'm invited to a cookout, this cheesecakes comes with me. Chocolate Chip Cookie Cake
In the 8th grade, I was lucky to be in Mrs. Staph's homeroom. Not only was she an excellent teacher, she was an outstanding baker. To celebrate students' birthdays, Mrs. Staph always made a chocolate chip cookie. Everyone loved these cakes. One weekend, I decided to try my hand at making a chocolate chip cookie cake. I knew my family would love it! (Mrs. Staph kindly gave me the recipe.) The recipe looked easy enough. It was chocolate chip cookie dough patted into a 9 x 13 inch baking pan. What could go wrong? Well, something did! The cake turned out flat and tough. I guess it was my first lesson in baking science. This failure didn't stop me. I asked my mom to help and with her guidance, the recipe worked. I still love chocolate chip cookie cakes! Now, I would probably call the recipe "chocolate chip cookie bars." Honey Bars
Do you like honey? I don't! Sounds funny, doesn't it? But I have never really cared for honey. Yet, when developing these bars, which started life as "blondie-style bars", I knew they needed something. I just couldn't put my finger on what, exactly, they needed. How fun! A recipe you can customize to your own tastes. The bar reminded everyone of a Blondie. We added chocolate chips to one batch and dried cherries to another. Both were a big hit.
