Blueberry Cheesecake Bars Thanks so much for all your recipes. I wanted to share a recipe with your readers for a cheesecake I've been making for years. When I was diagnosed, it was easy to convert this recipe to gluten-free. I just needed to use gluten-free cookies instead of my traditional graham crackers. Chocolate Chip Cookie Cake In the 8th grade, I was lucky to be in Mrs. Staph's homeroom. Not only was she an excellent teacher, she was an outstanding baker. To celebrate students' birthdays, Mrs. Staph always made a chocolate chip cookie. Everyone loved these cakes.
One weekend, I decided to try my hand at making a chocolate chip cookie cake. I knew my family would love it! (Mrs. Staph kindly gave me the recipe.) The recipe looked easy enough. It was chocolate chip cookie dough patted into a 9 x 13 inch baking pan. What could go wrong?
Well, something did! The cake turned out flat and tough. I guess it was my first lesson in baking science. This failure didn't stop me. I asked my mom to help and with her guidance, the recipe worked.
I still love chocolate chip cookie cakes! Now, I would probably call the recipe "chocolate chip cookie bars." But, Mrs. Staph called it a "chocolate chip cookie cake". And so do I! . . . keep reading
