Sweet and Soup Radish Relish Recipe

Recipe adapted from From Scratch Club "Radish Relish"
3/4 cups apple cider vinegar
1/4 cup granulated sugar
1 teaspoon kosher salt
1/2 teaspoon dill weed
1/2 teaspoon cumin powder
1 teaspoon mustard
about 3/4 pound radishes (about 12 or so radishes), washed, trimmed, and grated
1 small onion, peeled and grated
Note from Elizabeth:
- In medium pan, combine cider vinegar, granulated sugar, kosher salt, dill weed, cumin, and mustard. Stir to combine. Bring to a boil.
- Add the grated radishes and onion. Stir to combine. Cook until radishes soften, about three minutes.
Remove from pan and allow to cool. Chill overnight before serving.
Although this recipe was modified from a recipe that could be canned, my version should NOT be canned.
