1/2 head small cabbage, shredded
1/2 red bell pepper, diced
1/2 small onion, diced
1/2 cup mayonnaise;
1 tablespoon olive oil
1 tablespoon red wine vinegar
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
pinch garlic powder
- In large bowl, combine all ingredients. Stir to combine. Taste. Adjust seasonings and dressing as desired. Since the size of a "small" cabbage varies, you might need a splash more vinegar or a dab more mayo.
- Serve. Store leftovers in the refrigerator for up to two days. The coleslaw releases liquid when stored in the refrigerator. This doesn't bother me but some folks don't love it.
