BWD: Banana Cream Pie

Ah, banana cream pie. It's one of those classic desserts that everyone seems to love. Everyone but my husband, that is. For some reason, the creamy-dreamy-silky appeal of banana cream pie doesn't, well, appeal to him. What is wrong with him?!? I don't know but, clearly, he is missing out!

This week's Baking with Dorie challenge tackled Dorie's Banana Cream Pie. (The recipe can be found on pages 342-3 of Baking: From my home to yours by Dorie Greenspan.)This recipe really highlighted what I love about baking. Dorie took a classic recipe, tweaked it just a little and, boom, we have a new take on banana cream!

Dorie swapped white sugar for brown and, I have to say, I wasn't sure whether or not I'd like that change. Custard is so delicate that I wondered if the brown sugar would overwhelm it. Happily it didn't! It just added a pleasant flavor note. 

If you've been following along with these challenges, you know that I tend to tinker with Dorie's recipe more than just making it gluten-free. This recipe was no exception. Dorie tops her pie with a generous helping of whipped cream and sour cream. While this is great, I just didn't want the richness this time around. So I left the topping off. It was still delicious!

I picked up some eggs at the farmers' market this weekend. This resulted in a custard that was bright yellow! Other than that--and swapping out the pie crust for gluten-free--I kept the recipe the same.

(I usually can't send you to the other bloggers sites for the recipe because I convert them to gluten-free. Since the custard is naturally gluten-free, you can see what Dorie created for the recipe!
