(Recipe) Cinnamon Bun Waffles

Waffles with a cinnamon bun-like swirl? Yup! 


Preparation Note:

The cinnamon swirl might leave a little sticky residue on your waffle iron. I found that it was easier to clean the waffle iron while it was still warm; any sticky bits came right off. If the waffle iron cools, it's more of a bother to clean. 

1 recipe gluten-free waffles

1/4 cup dark brown sugar, packed

1 tablespoon butter, softened (increase to 2 tablespoons for a richer swirl.)

2 teaspoons ground cinnamon

2 tablespoons milk

For the Glaze (optional but awesome)

1 cup powdered sugar

2 tablespoons milk, plus more as needed

1 teaspoon vanilla extract. 

1. In a small bowl, combine dark brown sugar, butter, and ground cinnamon. Mix until a thick paste forms. Add milk. Stir to combine. Mixture will be thick and look curdled. This is normal. As long as it's thoroughly combined, you're fine. Transfer mixture to a pastry bag fitted with a small (number 4) tip or, if you don't have a tip, cut a hole in the bag later. Set aside. 


2. Preheat waffle iron and prepare waffle batter as directed. Spray waffle iron with non-stick cooking spray. Ladle batter into iron. Immediately squeeze brown sugar mixture over waffles, in random lines. No need to be perfect. Close iron. Bake until golden brown.


3. While waffles are baking, prepare glaze. Combine powdered sugar, milk, and vanilla extract in small bowl. Stir to combine. If icing's too thick, add additional milk.
