Easy Coleslaw Recipe

1/2 head small cabbage, shredded

1/2 red bell pepper, diced

1/2 small onion, diced

1/2 cup mayonnaise;

1 tablespoon olive oil

1 tablespoon red wine vinegar

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

pinch garlic powder

  1. In large bowl, combine all ingredients. Stir to combine. Taste. Adjust seasonings and dressing as desired. Since the size of a "small" cabbage varies, you might need a splash more vinegar or a dab more mayo.


  2. Serve. Store leftovers in the refrigerator for up to two days. The coleslaw releases liquid when stored in the refrigerator. This doesn't bother me but some folks don't love it.
