Hot Fudge Pudding Cake

This cake is really unusual. As it bakes, it makes a hot fudge sauce! Served warm, with or without ice cream this dessert is delicious! Dry Ingredients

3/4 cup white rice flour

1/4 cup cornstarch

3/4 cup granulated sugar

2 Tablespoons natural cocoa powder

2 teaspoons baking powder

1/4 teaspoon xanthan gum

1/4 teaspoon salt

Wet Ingredients

1/2 cup milk

2 Tablespoons vegetable oil

1 teaspoon vanilla extract

1 cup chopped nuts, optional

Topping

1 cup brown sugar

1/4 cup cocoa powder

1 3/4 cups hot tap water

Ice Cream, for serving, optional

  1. Preheat oven to 350 degrees F. Lightly spray a 9x9-inch baking pan with non-stick cooking spray. Set aside.

  2. In a medium mixing bowl, whisk together dry ingredients. Add wet ingredients and blend until smooth. Batter will be very thick. Add nuts, if using.

  3. Spread batter evenly into the bottom of prepared baking pan.

  4. In a small bowl, mix together brown sugar and cocoa powder. Sprinkle mixture evenly over the cake batter.

  5. Pour hot water over the top of the batter.

  6. Bake 40 minutes. The top of the cake will be "set" and the bottom will be very loose.

  7. Remove pan from the oven and allow to stand for 15 minutes.

  8. Spoon cake into dessert dishes and serve with ice cream, if desired.
