Apple Cider Doughnut Holes

These doughnut holes are AMAZING! My mom, who claims to hate doughnuts, polished off several of these doughnuts one day while I was testing them. She kept saying, "I love the crunchy outside! These are so good." And she was right! These are good!

I know making doughnuts might seem like a big chore. Honestly, they are as easy as making pancakes. I promise! All you need to do it mix up the batter and then drop it into preheated oil. The doughnuts will puff and turn golden brown. After a quick roll in cinnamon-sugar, it is time to eat the doughnuts!

Dry Ingredients

1 cup white rice flour

1/4 cup potato starch

1/4 cup tapioca starch

1/3 cup granulated sugar

2 teaspoons baking powder

1 teaspoon xanthan gum

1/2 teaspoon salt

1 teaspoon cinnamon

Wet Ingredients

1 large egg

1/2 cup apple cider

2 Tablespoons vegetable oil (I used corn oil.)

Cinnamon-Sugar for Coating Doughnuts

1/2 cup granulated sugar

1 teaspoon ground cinnamon

Equipment Needed

Deep Fryer*

Small Cookie Scoop

  1. In a small mixing bowl, whisk together dry ingredients. Add wet ingredients. Mix until thoroughly combined. Batter will be soft. Set aside.

  2. Prepare the cinnamon-sugar coating: Combine sugar and cinnamon in a small loaf pan. Stir to combine. Set aside.

  3. Heat a deep fryer to 375 degrees F. Follow manufacturer's instructions for filling and heating deep fryer.

  4. Using a small cookie scoop, drop the dough, 1 1/2 teaspoons each, into preheated oil. (Do not crowd the fryer. I usually fry 6 doughnut holes in my small "Fry Daddy" fryer.) Dough will puff. Allow doughnut holes to fry for 1 minute. After 1 minute, use a long skewer to turn the holes over in the oil. This ensures they will brown evenly on all sides.

  5. Cook doughnut holes, about 2-3 minutes, until golden brown.

  6. Remove doughnut holes from oil and drain on a paper towel. Transfer doughnut holes to cinnamon sugar. Roll in cinnamon-sugar mixture until completely coated.

  7. Repeat until all batter is used.

  8. Makes about 2 1/2 dozen doughnut holes.

    * If you don't have a deep fryer, you can fry these doughnuts in a heavy-bottomed saucepan. Fill pan with 2 1/2 inches of vegetable oil. Heat over medium heat until oil reaches 375 degrees on a deep-dry thermometer. Follow directions above.
