Description: We’ve replaced the traditional chocolate cookie with a luscious strawberry cookie. This new twist on a classic ice cream sandwich is divine. And, these ice cream sandwiches scream cute! Why? They’re pink! Can you imagine? Pink ice cream sandwiches! Not only are the adorable, they taste fantastic. The only problem I have with these sandwiches is what to put between the cookies! I love the flavor of strawberries and cream, so, I usually use vanilla ice cream. Unless I am in the mood for strawberries and chocolate, then I use chocolate ice cream. Oh, then there is the double strawberry sandwich when I use strawberry ice cream....
Ingredients: Dry Ingredients

1 1/4 cups white rice flour

1/2 cup cornstarch

1/4 cup sweet rice flour

1/2 teaspoon salt

1/4 teaspoon xanthan gum

Wet Ingredients

1 1/2 cups strawberries, fresh or frozen

1/4 cup heavy cream

1/2 cup granulated sugar

1 Tablespoon baking powder

6 Tablespoons cold butter, cut into pieces

1 large egg

2 teaspoons vanilla extract

1 pint ice cream, your favorite, of course!
  1. Preheat oven to 375°F. Line two baking sheets with parchment paper.

  2. In a large mixing bowl, whisk together dry ingredients. Set aside.

  3. In the bowl of a food processor, combine strawberries and heavy cream.

  4. Process until smooth. Add egg and vanilla. Pulse one or two times until well combined.

  5. Transfer strawberry mixture, to a small bowl.

  6. Add dry ingredients to the bowl of the food processor. Pulse to combine.

  7. Add butter and pulse until no large pieces of butter remain. (Mixture should resemble a coarse meal.)

  8. Pour strawberry-egg mixture over the dry ingredients. Run food processor until a dough forms.

  9. Drop the dough, about 2 Tablespoons each, onto prepared baking sheets. Be sure to space cookies at least 2 inches apart. These cookies will spread.

  10. Bake 10-12 minutes or until golden brown.

  11. Remove baking sheet from oven. Transfer cookies to a wire rack to cool.

  12. Repeat with remaining batter.

  13. Once cookies are cooled completely, sandwich cookies together with your favorite ice cream.

  14. The ice cream sandwiches can be stored in a freezer container for approximately 1 week.

Alternative Directions for Strawberry Ice Cream Cakes

  1. In a large mixing bowl, whisk together the dry ingredients. Set aside.

  2. In a blender, combine strawberries and heavy cream. Blend until smooth.

  3. Pour mixture into a small bowl. Add egg and vanilla. Whisk until thoroughly incorporated. Set aside.

  4. Add cold butter to the dry ingredients.

  5. Using a pasty blender, or your fingers, cut the butter into the dry ingredients until no large pieces of butter remain. Mixture should resemble a coarse meal.

  6. Pour strawberry mixture over the dry ingredients. Stir, using a wooden spoon, until a dough forms.

  7. Follow instructions above for baking. (Begin at step nine.)
