Belgium Waffle Recipe

|Description: ||I am very particular about waffles. For me, a great waffle must have a crisp exterior and a soft, soufflé-like interior. This was the goal for these gluten-free waffles. After many recipe trials, we settled on this one as the winner.|
1/2 cup white rice flour
1/4 cup cornstarch
1/4 cup sweet rice flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon sugar
2 large eggs
1 1/2 cups buttermilk
2 Tablespoons butter, melted
||1. In a medium bowl, whisk together white rice flour, corn starch, sweet rice flour, baking powder, baking soda, salt and sugar.|
2. In a small bowl, whisk together eggs, buttermilk and butter.
3. Pour egg mixture over dry ingredients. Blend until thoroughly combined.
4. Bake in waffle iron according to appliance instructions.

If maple is a "no-no" for you, try "Lyle's Golden Syrup." This British import is pure cane sugar syrup. Light amber in color this syrup has a pleasant buttery caramel flavor; it is superb on waffles and pancakes.
The idea of freshly baked waffles in the morning is sometimes better than the reality. Why? Getting out of bed and measuring dry ingredients can be tedious when you would really prefer to be lounging with a cup of coffee and the newspaper.
The solution? Create your own waffle mix. Simply measure all the dry ingredients into a zip-lock bag, label and store in a cool, dry place. When you feel like enjoying a relaxing morning and waffles, all you need to do is add the liquid ingredients.
