(recipe) Gluten-Free Pulled Pork with Chipotle

Guys. C'mere. (whispering) Summer is drawing to a close. I know. I can't believe it either!

So it's funny to me that I'm sharing a recipe for pulled pork that you cook inside! Because right now, I want to spend as much time outside as possible.

The inspiration for this recipe came from a recent post by Stephanie Stiavetti on SeriousEats.com. Her recipe for Dr. Pepper pulled pork looked *amazing.* How amazing? So amazing that it got me to pull out my slow cooker and dust it off. (You can cook the pork in the oven, too. I just didn't want to heat up the kitchen.)

After reading the recipe, I decided that I wanted a little more kick in my pulled pork. A quick search led me Ree Drummond's recipe. Like Stephanie, Ree uses Dr. Pepper too. But she also includes canned chipotle peppers. That was the kick I wanted!

Making the pork is simple, all you do is brown the pork and some onions and cook for a loooong time with Dr. Pepper, chipotle peppers, and some vinegar and brown sugar. The most important ingredient, really, is time. If you don't cook this long enough the pork remains tough. You don't want that. The pork should basically fall apart when poked with a fork.

And that's how I "pull" this pork. I place the slab of tender pork on a cutting board and then, using two forks, I pull with grain of the meat. The pork begins to come apart in long pieces. Like this:

And while you can toss the cooked pork with store-bought barbecue sauce, I encourage you to spend some time making homemade sauce.

After cooking the pork, strain the cooking liquid. (I use my nifty Oxo gravy separator.)

Measure out about a half cup of strained cooking liquid and whisk in some ketchup and some of the chipotle peppers that cooked with the pork. This sauce, oh my gosh, this sauce is amazing. It's rich and spicy.

Since it's still summer, serve the pulled pork with a salad made from local greens. Sweet corn or a slice of cornbread also goes nicely with the pork. Then take your plate and head outside. Summer is on the wane, eat it up while you can!
