Happy National Cheesecake Day! What? You didn't know it was National Cheesecake Day? Neither did I! But now that we know that today's the, we can celebrate--even if we celebrate a few days later! Here are three cheesecake recipes that are great during the summer.

Ricotta Cheesecake

Ricotta cheesecakes taste lighter than their cream cheese cousins. Lemon zest helps to highlight the tang of the ricotta. And since lemons and blueberries go so well together, I'd make a an easy blueberry topping and spoon it over the cake.

Jam Cheesecake Brownies

Don't feel like making an entire cheesecake? How about these jam-laced cheesecake bars? I used raspberry jam but any jam works really well, especially homemade jam!

Strawberry Cheesecake Tart

This tart is extra special thanks to the cocoa powder and almond flour found in the tart shell. Top it with fresh strawberries or raspberries. Or if you want, omit the berries altogether!
