Buttermilk Biscuit Recipe
These buttermilk biscuits are so fluffy that it's surprising that they don't float off the table!

1 1/4 cups (5 ounces) white rice flour, plus additional for dusting counter
1/2 cup (2 ounces) sweet rice flour
1/2 cup (2 3/4 ounces) potato starch
2 1/4 teaspoons baking powder
1 teaspoon granulated sugar
3/4 teaspoon salt
1/2 teaspoon baking soda
6 tablespoons cold butter or vegetable shortening, cut into small pieces
1 1/4 cups buttermilk, divided
