(review) Amy's Gluten-Free Pizza

Back in late November, I wanted to review Amy's Cheese Pizza with Rice Crust. And then? Life happened. You know how that goes. The night I planned on reviewing and photographing the pizza, my friend called. Her mother had just been admitted to the hospital. She asked if I could put together an overnight bag for her so she could stay by her mother's side. Pizza suddenly didn't matter.
I ran to my friend's home, packed her a bag and headed to the hospital. By the time I returned home that night I was so grateful for the frozen pizza that awaited me.
And that's how I've come to think of Amy's Pizza. It's perfect when you're in a time crunch. It's great for those nights when you want a pizza and don't have the energy or time to make one.
The pizza comes out of the box topped plainly with a light sauce--the sauce isn't spicy but, happily, it isn't sweet--and an almost generous amount of cheese. As is, the pizza, well, it's almost boring. But boring isn't always bad. It's just...boring.
One of the best things to do with this pizza is to throw some of your favorite toppings onto the pre-made pizza before you bake it. I've eaten Amy's pizza several times now. When I topped it with pepperoni, lightly sauteed peppers, and onions, I really liked it! When I ate the pizza straight from the box, it was boringly passable.
In my opinion, one of the best things about the pizza is how it cooks. Many store-bought gluten-free pizzas don't get brown. This one does! Even without adding extra toppings, the pizza turns a nice golden brown if you bake it long enough. Kudos to Amy's for using a cheese that browns!
Now, we need to talk about the crust. The crust, I'm afraid, is a like it or loathe it affair. This isn't a chewy-crispy New York-style pizza crust. Nor is it a dry, cracker-like crust found on wheat frozen pizzas. No, this crust is soft. But not chewy soft. Just soft. It offers no resistance when you bite into it. I hesitate to say it's similar to the texture of a quick bread (think banana bread, but not sweet) but, really, that's the only texture I can compare it to. That soft texture is why some folks dislike this pizza. (I only know this because I asked people on Facebook.)
Yet, the crust texture, dare I say it, doesn't bother me. It's a gluten-free pizza I can make in under 30 minutes. The only work I need to do is turn on the oven. And for nights when life gets busy, I'm so happy that this pizza is an option.
Oh, for egg-allergic folks, this pizza is also egg-free.
